Green Salad with Salmon

1 can wild salmon, drained
1 tbsp Dijon mustard
1 tbsp capers
1 tbsp mayonnaise 
4 tbsp olive oil
1 tbsp chopped parsley
1 tbsp rice vinegar
1 bag organic salad greens
salt and pepper


  1. Break up the salmon with a fork in a medium bowl. Add mustard, mayo, capers, 1 tbsp of the olive oil, and parsley and combine all together.
  2. In a salad bowl, mix together the vinegar and the remaining 3 tbsp oil until well combined. Season with salt and pepper. Add the salad greens and mix to coat in the dressing.
  3. Divide the salad greens between plates and top with salmon salad.
  4. Serve and enjoy!
