Ingredients 1 can wild salmon, drained 1 tbsp Dijon mustard 1 tbsp capers 1 tbsp mayonnaise 4 tbsp olive oil 1 tbsp chopped parsley 1 tbsp rice vinegar 1 bag organic salad greens salt and pepper
Instructions
- Break up the salmon with a fork in a medium bowl. Add mustard, mayo, capers, 1 tbsp of the olive oil, and parsley and combine all together.
- In a salad bowl, mix together the vinegar and the remaining 3 tbsp oil until well combined. Season with salt and pepper. Add the salad greens and mix to coat in the dressing.
- Divide the salad greens between plates and top with salmon salad.
- Serve and enjoy!
