Chicken Chop Salad

Chicken Chop Salad makes it a healthy and a quick lunch choice. It is nutritious and yummy. Also, quite economical and convenient since the below amount of ingredients makes 3 lunches for me. And as you know we all suffer for not having enough time in life… so this just works great!

Cook Time: 10 mins

Total Time: 20 mins


 Ingredients:
2 cups cooked chicken (about 1 large breast)
2 hard cooked eggs 
1 cup halved cherry tomatoes
1/2 cup diced red onion
1 avocado
1 head Romaine lettuce, chopped
2-3 tbsp Ranch dressing 
Optional: 1/2 cup of feta or blue cheese

Instructions:

  1. Cook chicken and chopped.
  2. Hard cook eggs, around 8 minutes.
  3. Mix all the ingredients together.
  4. Add dressing, 2 to 3 tablespoons depending on liking.
